Why This Recipe Works

・Red miso adds savory depth without overpowering sweetness
・Butter and milk soften miso’s intensity for a balanced finish
・Simple technique with professional-level results
・Uses Japanese ingredients in a familiar Western side dish
・Beginner-friendly, yet adaptable for more refined cooking
・A quick upgrade for weeknight meals or casual entertaining

Ingredients (Serves 2)

・1 can sweet corn, drained (about 5–6 oz)
・⅓ cup milk
・2 tsp unsalted butter
・1 tsp all-purpose flour
・½–1 tsp red miso (adjust to taste)
・Freshly ground black pepper, to taste
・Salt (optional, use sparingly)

Instructions

① Prepare the corn

Drain the canned corn thoroughly and set aside.

② Dissolve the miso

In a small bowl, dissolve the red miso with 1 Tbsp of the milk until smooth.
This prevents lumps and ensures even seasoning later.

③ Heat the base

Place a small saucepan over medium-low heat.
Add the butter and allow it to melt gently without browning.

④ Add the corn

Add the drained corn to the pan and stir to warm through.

⑤ Thicken with flour

Sprinkle the flour evenly over the corn.
Lower the heat and stir continuously until no dry flour remains, forming a light roux.

⑥ Add the milk

Pour in the remaining milk while stirring.
Continue stirring until the mixture thickens slightly and becomes creamy.

⑦ Add the miso

Add the dissolved miso mixture and stir gently to combine.
Avoid high heat to preserve miso’s aroma and prevent scorching.

⑧ Finish and season

Once heated through, remove from heat.
Season with black pepper and add salt only if necessary.

Pro Tips

・Cook over low heat to avoid burning the butter or miso
・Add miso gradually and adjust to taste
・Replace 1 Tbsp of milk with heavy cream for extra richness
・Finish with a small knob of butter for a deeper aroma
