Noda Miso Co. founded in 1928 (Showa 3), has been nurturing miso using traditional methods in Toyota City, Aichi Prefecture, while preserving approximately 400 of Japan’s largest wooden barrels and storehouses.
Toyota Masuzuka Series
Based on three core commitments—locally grown soybeans, wooden barrel aging, and natural fermentation—the Toyota Masuzuka series was created to deliver the authentic aroma, flavor, and character of unprocessed miso directly to customers as faithfully as possible.
The product name, Toyota Masuzuka, reflects our gratitude and connection to Masuzuka in Toyota City, where our company is located.
Mame Miso Specialty - Limited Rustic Raw
This is the flagship and finest product of the Toyota Masuzuka series.
Known as “Toro Miso,” it is raw, unheated miso that accounts for only about 5% of the miso taken from the center of the large barrels.
Because it matures with minimal exposure to air, it is almost entirely unaffected by oxidation. The balance between the pressure of the heavy weights and the slow aging process creates a deep, rich umami with refined elegance.
Our craftsmen carefully assess the condition of the miso and extract it little by little. Only those batches approved during an inspection by the third-generation proprietress and the master of the storehouse are given the name “Toro Miso.”
This rustic raw miso is harvested from near the center of the barrel, just like the Toro Miso sold by weight on site, and retains whole soybeans unique to this central part.
When you crush the beans, the miso releases its most exquisite aroma, letting you fully experience its authentic flavor.

How to Eat?
First, try it simply by spreading it on fresh cucumber or placing it on steamed rice.
Next, dissolve it in hot water using a miso strainer to enjoy it as miso soup, crushing the soybeans as you mix.
As a hidden flavor in everyday cooking, it will enhance depth and aroma in any dish.

Soybeans (grown in Aichi), salt, *(koji mold, roasted barley flour)
* In accordance with the regulations of the Consumer Affairs Agency of Japan, koji mold is not listed on the product label.
* A small amount of barley is used to ensure the salt penetrates the soybeans thoroughly. The gluten content in this product is considered “gluten-free” (less than 20 ppm) in accordance with the CODEX standard.
