The French word for vinegar, vinaigre, means "sour wine," reflecting its origin from fermented alcohol. Vinegar dates back to 5000 BCE in Babylon, likely discovered by accident through natural fermentation. Ancient civilizations, including Greece and China, used vinegar for its medicinal benefits. In Japan, rice vinegar production began in the 4th–5th centuries via Chinese techniques and became popular during the Edo period, especially with the rise of sushi.
In Japan, there are mainly two types of vinegar Cooking and Drinking.
Vinegar stimulates digestion, improves bowel movements, and aids in fatigue recovery when consumed with sugar. It also helps reduce visceral fat, lower blood pressure and cholesterol, and may help prevent cancer. In hot seasons, vinegar-based dishes can help boost appetite, making it a valuable part of both diet and health.
