Unique Balance of Deep Tamari Umami × the Lightness of Koikuchi Soy Sauce: This soy sauce blends about 20% wheat into the recipe, creating a “new, easy-to-use tamari” that retains the rich umami of traditional tamari while offering a brighter color and a lighter, smoother finish. In the Tokai region, tamari is the standard, but younger generations increasingly prefer milder flavors—this product was developed in response to that shift. It delivers the deep, mellow richness of soybeans not found in regular koikuchi soy sauce, yet avoids the heavy color typical of traditional tamari.

Crafted with Whole Soybeans and Wheat from Mie, Using a Distinct Brewing Method: The ingredients are simple: whole soybeans and wheat from Mie Prefecture, salt, and a small amount of alcohol to stabilize fermentation.
