Taikei Seito handcrafts every step of preserving and producing Taikei-shu, a rare native sugarcane deeply rooted in the island’s history.
Limited-Edition Rare Brown Sugar
At Taikei Seito, the rare thick-stalk variety of sugarcane is carefully processed entirely by hand.
Even weeds and impurities are removed manually to ensure the highest quality.
Black sugar is made from winter to spring, when the colder weather helps increase the sugar content, resulting in a richer, more delicious flavor.
Mr. Nakata begins production in late December, with the main manufacturing season running from January to early May.
Once it's sold out, there won’t be more until the next season.

There are two types of “kokuto” (black sugar):
• Pure kokuto, made by boiling down sugarcane juice only
• Processed kokuto, which adds other sugars and syrup to create a black sugar flavor
Taikei Seito produces 100% pure kokuto, made solely from sugarcane juice—no added syrup or sugars, unlike most products found on the mainland.
The thick-stalk sugarcane comes in two varieties—green stalk and red stalk, each with its own flavor profile.
Green offers a gentle, mellow taste, while red brings a deeper, richer flavor.
Taikei Seito blends the two in a proprietary ratio, creating a refined black sugar with a deep body and a clean, smooth finish.
