Using groundwater seawater, filtered naturally through sand, Ginzo pours it into cedar crystal boxes inside a greenhouse. From that moment, he works every single day without rest, rising with the sun and observing the salt’s progress until it sets.
Each day brings change—humidity, temperature, sunlight, and wind all shape the salt differently. To salt craftmaster, salt is a living being. The Seasonality of Salt: Just like produce, Ginzo’s salt has its own seasonality. Salt does not have an expiration date. Because it contains nigari (bittern), this salt has a naturally moist texture. If it becomes hardened, there's no change in taste—just crumble it gently by hand before using.
This product is designed to be used in generous amounts or consumed relatively quickly, and is not intended for long-term storage in its paper packaging. Because both salt and paper are highly moisture-absorbent, some moisture may appear inside the package. However, this does not affect the quality or taste of the salt and it can be used without any issue.
For long-term storage, we recommend transferring the salt to a container to maintain optimal condition.
