Kibi-su is a rare fermented vinegar produced exclusively in the Amami Islands of Japan.
In Kagoshima’s Amami region, it is cherished as a longevity food due to its high nutritional value.
Taikei Seito’s Kibi-su is made without added acetic acid bacteria or heat processing.
It uses only the natural acetic acid bacteria found on the surface of thick-stem sugarcane.
This traditional method results in an authentic, natural vinegar.
Made purely from natural ingredients and crafted through natural fermentation,
Kibi-su is exceptionally mild and smooth—surprisingly easy to drink for a vinegar.
Although sugarcane is the raw material, it contains no sweetness.
It has a unique flavor from natural fermentation, which can be softened by gently heating, if preferred.

Mild and smooth with no sharp tang, this vinegar is easy to drink and goes well with juice, amazake, yuzu tea, or even shochu.
Lighter than black vinegar, it’s perfect for delicately seasoned dishes and brings out the natural flavors of vegetables and fish—especially in pickled recipes.

It pairs especially well with tomato-based sauces.
