At Mineral Kobo, they are dedicated to traditional salt-making methods, carefully crafting each batch with time and attention to detail.
Their Unique 4-Step Process
1. Seawater Collection Concentration
We draw seawater from the rocky shores of the Sea of Japan and transfer it to a concentrating cauldron.
Using heat from firewood, we slowly evaporate the water to create a rich, concentrated brine known as boeki.
2. Removing Impurities
The brine is left to settle naturally, allowing impurities like lime to sink and be removed.
This crucial step ensures a clean, pure salt with no off-flavors.
3. Enhancing Umami with a Signature Step
The purified brine is moved to a finishing kettle for gentle heating.
Here, we apply a special Mineral Kobo technique to enhance the natural umami of the salt.
4. Low-Temperature Crystallization
The final step is slow crystallization at a constant low temperature.
Salt crystals form gently on the water’s surface, resulting in a coarse, flavorful salt that melts smoothly on the tongue.
Most salt sold in supermarkets today is made using industrial methods like ion exchange membrane electrolysis.
These salts are mostly sodium chloride, stripped of the many beneficial minerals naturally found in seawater — resulting in a flat, overly salty taste.
