Noda Miso Co. founded in 1928 (Showa 3), has been nurturing miso using traditional methods in Toyota City, Aichi Prefecture, while preserving approximately 400 of Japan’s largest wooden barrels and storehouses.

Miso Tamari – Hon Tamari

This Mame Miso is made with non-GMO soybeans sourced from trusted farmers, salt, and underground water from the Yahagi River.
Miso Tamari is the rich liquid that naturally seeps to the surface at the moment the long-aged Mame Miso is fully matured.
It looks like soy sauce made only from soybeans and salt, but it is not soy sauce—it is a thick, concentrated essence packed with deep umami.

The origin of soy sauce

Soy sauce is produced by fermenting and aging soybeans and wheat with koji and saltwater, specifically to create a liquid seasoning.
Its origin lies in the Japanese hishio, an ancient fermented paste.
With fermentation techniques introduced from China, koku-hishio, a fermented food made from soybeans and grains, was created.
In the fermentation barrels, liquid would naturally separate and was collected—this is considered the beginning of soy sauce.
Later, during the production of Kinzanji Miso, the liquid that seeped out was refined and used as seasoning, evolving into modern soy sauce.
In other words, the roots of soy sauce are very close to miso tamari, the liquid that emerges naturally during miso making.

It contains more than three times the umami components of ordinary soy sauce.
Unlike typical soy sauce, it has a rich, thick texture.
We recommend using about one-third to one-quarter of the amount you would normally use.
