Amber-Hued White Soy Sauce: White soy sauce originated in Hekinan, Aichi Prefecture, and accounts for only 0.8% of soy sauce production in Japan. Wooden-barrel-brewed white soy sauce is even rarer. Made mostly from wheat (soybeans:wheat = 1:9) and fermented briefly, it offers gentle sweetness, soft aroma, and light salinity.
Returning to Wooden Barrels: White soy sauce had long been brewed in enamel tanks due to its delicate color, but Isegura revived wooden-barrel brewing in October 2024. Over time, the barrels deepen the flavor and character.
Isegura White Soy Sauce — Sweetness, Umami, Aroma: Brewed twice a year. The moromi is dry and hand-pressed, producing natural sweetness, rich umami, and a bright aroma—hallmarks of Isegura’s craftsmanship.
